My beginnings

I LOVE to cook! Plain and simple....I learned from my Mom, but have experimented with different spices and methods than Mom ever used. I grew up in a small Swiss town in Indiana and though I loved my Mom's cooking (and still do!), the spices in our house were pretty much limited to salt, pepper and ketchup. I was snowed in and off work for a week in January of 2012 where I re-found my love of cooking. I posted on Facebook, a simple Chicken Chili recipe that I'd thrown together. It was suggested that I put together a cook book or a blog....and so here are my beginnings. We'll see how long I can keep this going! Would love others to submit their easy, simple recipes! Thanks!

Aaron & Joe's Wedding. Saturday, September 28, 2013

On our wedding day, it was so rainy and stormy. One of the worst rain storms I'd witnessed since living in Washington. The wind was blowing so hard that it knocked down corn fields all over the county and there were power outages all over the place. The lights were flickering at our wedding venue, The Grand Willow Inn...this whole thing put a kabosh on our original plans of having the ceremony outside. But the Grand Room was a beautiful alternative! The songs featured on the video are very representative of the day and our future...."The Best Day of My Life" by American Authors and "This is the New Year" by Great Big World but performed by the Cast of 'Glee'. It truly was the best day of our lives and was the beginning of a new year, and many years to come!

As a part of the ceremony, each of our attendants were asked to find a small gift that they felt represented us in some say...with an explanation of how it represented us. We were unaware of what the gifts were or the stories behind them till the ceremony. Some gifts were definitely a tear jerker while others left us in stitches! (Thanks for the Oscar Mayer Wiener Whistle, Jesse!) After 16 years together, going through lots of challenges ranging from the loss of loved ones and pets, health and financial hardships and just every day challenges...we were able to legally seal the deal and now we are LEGALLY, OFFICIALLY and UNDENIABLY MARRIED!!

Thank you to our family and friends who support and love us unconditionally! Relationships take lots of work from within to be successful....but it sure make it a lot easier when you have love and support on the outside helping you as well!

Scalloped Pineapple

2 cans crushed pineapple, NOT drained
1 jar baby food bananas
1/2 cup sugar (or less)
1/2 stick butter melted
1 egg

Mix all together in a bowl
Add:
8 slices of white bread (cubed)
(you may need more bread if the mixture is too soupy)

Bake in a greased 9x13 pan, covered, at 375 degrees for 45 minutes to 1 hour. Uncover for last 15 minutes, or until top is golden brown.

Goes well as a side with pork, or as a dessert with ice cream.

Easy Chicken Pizza

Frozen Cheese Pizza of your choice
Top pizza with these ingredients in this order:

1/4 cup Fresh Basil, minced
1 roma tomato, chopped
1/2 cup canned chicken (I break up the larger chunks)
1/3 cup feta cheese
Drizzle Olive Oil over pizza and toppings
Sprinkle with shredded Parmesan cheese
Garlic salt and fresh cracked pepper over the top.

Bake at 425 for about 10-13 minutes (or until crust is done)

Aaron's Easy Chicken Chili

In a stock pot, Saute Half an onion, chopped and 4-5 cloves of garlic, minced, in 2 Tblsp. Olive oil.
When onions are tender, add 3 cans of Costco Chicken, 2 cans Chili beans (juice and all), 2 cans of Great Northern White Beans (juice and all) 2 cans of diced tomatoes with green Chilies, 2 Tblsp. chicken base (I use "Better than Boulion") 4 cups water, 1 1/2 Tblsp. Cumin, 1 Tblsp. Chili Powder, 1 1/2 Tblsp. Garlic powder, 2 tsp dried cilantro (could use fresh cilantro, minced) Salt to taste.
 Let simmer. 
Add 2 cups frozen corn and simmer till corn is cooked.


 Very easy!! I like to eat mine with fresh avocado on top.
